How to cook Ukrainian pancakes nalysnyky: recipes

Nalysnyky («налисники») are Ukrainian crepes with different fillings. It’s a very popular dish in all regions of the country. Rolled pancakes with different fillings are made in different countries of the world, the principle of making is the same, but batter, stuffing can differ.

Ukrainians cook crepes and nalysnyky from ancient times. They can be cooked as everyday meal and for special occasions. For example, for Maslyanytsya (Ukrainian Mardi Gras), the feast of welcoming spring, nalysnyky are the main course.

There are numerous recipes for fillings in Ukrainian cuisine, but all of them are easy to make. Try to cook this traditional Ukrainian food.

No matter what type of filling you will choose, recipe for the crepes will always be the same.

Ingredients

You will need:

  • Milk – ½ liter:
  • Eggs — 2;
  • Vegetable fat – 2 tbsp.;
  • Sugar – 1 tbsp.;
  • Flour – 200 g;
  • Baking powder – 1 tsp.;
  • Salt (a pinch).

How to cook

Batter:



  1. Take a large bowl and beat eggs with salt in sugar in it until the mix becomes fluffy ad light.
  2. Add vegetable oil, mix well, then add milk and mix again.
  3. Add baking powder and flour, mix until the batter becomes smooth.

The batter is ready. Now take frying pan and preheat it on medium heat. Grease the pan surface with oil. Pour small amount of batter into the pan (depending of frying pan diameter), swirl the pan for a few seconds to make batter spread evenly.

Cook the pancake on a medium heat for about a minute (till it turns lightly browned), then turn it over with spatula and cook for another half a minute. Continue until all of the batter is used up.

You can eat these crepes as they are if you want. Ukrainians call them ‘mlyntsi’ («млинцi»). But if you want to try ‘nalysnyky’, you have to stuff pancakes.

How to choose filling

Nalysnyky can be sweet or savory, the choice depends on the occasion. Traditional variant for Ukrainian breakfast are sweet nalysnyky served with tea or coffee. Savory nalysnyky are more often served for dinner.

Among the most popular fillings for Ukrainian nalysnyky are:

  • ground meat (pork, beef, chicken);
  • liver;
  • chopped hard-boiled eggs and bunch onion;
  • mushrooms;
  • stewed cabbage;
  • cottage cheese with raisins or candied fruit;
  • fruit and berries.

  • boiled meat – 350 g;
  • onion – 1;
  • salt, pepper;
  • vegetable oil – 1 tbsp.

Boil meat and finely chop it, chop onion, too. Preheat frying pan, grease it with oil and slightly brown onion. Add meat into the pan, season with salt and pepper and cook for about 10 minutes.

  • liver – 600 g;
  • onion – 2;
  • carrot – 2;
  • salt, pepper;
  • vegetable oil – 1 tbsp.

Boil the liver and mince it. Chop onion and carrot, preheat frying pan, grease it with oil and fry vegetables slightly. Add minced liver, add salt and pepper and fry for about 5 minutes.

Ingredients:

  • eggs – 6;
  • bunch onion;
  • salt;
  • plain yogurt — 2-3 tbsp.

Boil the eggs hard, peel them, finely chop. Chop onion. Mix the ingredients, add yogurt and season with salt.

  • mushrooms – 300 g;
  • onion – 2;
  • carrot – 1;
  • salt, pepper;
  • vegetable oil.

Chop mushrooms, onion, carrot. Preheat frying pan, grease it with vegetable oil, fry onion for a few minutes, add carrot and mushrooms, season with salt and pepper. Fry until the onions become brown and no water is left.

  • cabbage – 300 g;
  • onion – 1;
  • salt, pepper;
  • vegetable oil – 1 tbsp.

Shred cabbage and chop onion. Preheat frying pan, grease it with oil. Put onion into it, cook for 2-3 minutes, then add cabbage, salt and pepper. Stew until no water is left.

Ingredients:

  • cottage cheese – 500 g;
  • honey – 2 tbsp.;
  • raisins and walnuts (optionally).

Mix cottage cheese with honey using mixer or blender to make it smooth. Add raisins and chopped walnuts. With this filling you can cook pancakes with cottage cheese.

  • berries (blackberries, raspberries, strawberries) – 300 g;
  • apple – 2;
  • powdered sugar – 100-150 g;
  • walnuts, raisins (optionally).

Rinse berries and put them onto paper towel. Peel the apples, grate. Mix apples with powdered sugar, chopped walnuts and raisins, add berries.

How to make nalysnyky out of crepes

When your crepes and fillings are ready, it’s time to make nalysnyky. There are three different ways to roll up nalysnyky:

  • tubes;
  • envelopes;
  • triangles.

To roll crepes into tubes spread an even layer of chosen filling over the crepe and just roll up gently.

If you want to make nalysnyky in an envelope shape, spread an even layer of filling over the top of the crepe, then fold right side and left side of crepe to the center. Take the upper part of the crepe and roll up.

To make nalysnyky in a triangle shape, spread the filling over the center of a crepe, fold three sides to the center. Then fold all of the edges to the center.

To make nalysnyky tastier, bake them for 10 minutes in the oven.

You can serve stuffed pancakes nalysnyky with a sour cream or any other sauce that matches filling.
