Ukrainian pampushki: types and recipes

Pampushki (singular – pampushka) are small buns made of yeasted dough and usually served with borscht. These buns are very popular among the Ukrainians and they can be definitely considered as traditional Ukrainian food.

For a long time Ukrainians cooked this typical for Ukrainian cuisine dish for holidays, on weekends, for memorial ceremonies.

Recipes of pampushki can differ, as well as different additional ingredients can be added or used as toppings. You can cook savory or sweet pampushki – choose the best variant for your family.

Savory pampushki

  • Milk – 300 ml;
  • Dry instant yeast – 2 tsp.;
  • Sugar – 2 tsp.;
  • Butter – 50 g;
  • 2 eggs;
  • Flour – 600 g;
  • Vegetable oil – 1 tbsp.;
  • Salt – ½ tsp.


  1. Take a large bowl and pour milk in it. Add dry instant yeast and sugar. Mix. Wait 10 minutes.
  2. Add 1 egg and 300 g of sieved flour, vegetable oil and melted butter. Bit by bit add the rest of the flour.
  3. Make dough and knead it well for at least ten minutes.
  4. Cover the bowl with towel and put it in a warm place for an hour at least to let the dough double.
  5. Divide the dough into small balls and put them on oiled backing pan leaving some space between the balls. Let the dough rise again for about ten minutes.
  6. Preheat the oven to 400F (180°C).
  7. Whisk 1 egg with 1 tbsp. of water. Brush the top of pampushki with this mix and put them into the oven. Bake for thirty-forty minutes.

Garlic sauce

Mince 5-6 garlic cloves, mix with salt, water and vegetable oil.

Take pampushki out of the oven and brush their tops with garlic sauce. Serve with borscht or any other first course.

Sweet pampushki

Sweet pampushki usually have stuffing – cottage cheese, jam, berries or fruit (fresh or preserved).

Ingredients for dough

  • Milk – 300 ml;
  • Water – 75 ml;
  • 1 egg;
  • Flour – 500 g;
  • Sugar – 1 tbsp.;
  • Instant dry yeast – 5 g;
  • Butter – 50 g;
  • Vegetable oil – 4 tbsp.;
  • Salt – 1 tbsp.

For stuffing you can use cottage cheese mixed with some sugar, jam, fresh fruit and berries.


  1. Take a large bowl, pour milk and water. Add sugar, salt and yeast. Mix.
  2. Add melted butter and egg, mix.
  3. Add sieved flour and knead dough.
  4. Cover the bowl with clean kitchen towel and put it in a warm place for half an hour to let the dough double.
  5. Sprinkle some flour on working surface.
  6. Divide the dough into small balls, put the balls on working surface making them flat.
  7. Put some stuffing (jam, berries or fruit) in the center of each pampushka and pinch the dough closed.
  8. Preheat oil in frying pan. Put 4-5 pampushki at a time, fry them 2-3 minutes for both sides.
  9. Put fried pampushki on paper towel to get rid of excessive oil.
  10. Sprinkle powdered sugar on top and serve pampushki with tea, juice, coffee or compote.
